There’s no way to sugarcoat this. Sunday, July 2, marked our final service before we closed our doors.
We opened our Canadiana-inspired restaurant under the name Bannock back in summer 2011. We had oodles of fun coming up with playful and diverse takes on Canadian comfort food, from our famous roast duck poutine pizza to the beloved Arcadian Court chicken pot pie, and welcoming guests into our rustic cheery abode. Together, we have countless fond memories of baking bannock, celebrating sugar shack season, sending happy guests home with holiday tourtières, and much, much more.
As all of us know, the last 3+ years have presented challenge after challenge for our industry. In addition to the effects of the pandemic and rising costs, our particular location has been plagued with endless construction and disruption to our operations. As painful as it is, sometimes you just need to make the tough decision to call it quits.
To our valued guests—whether you were a steadfast regular or an out-of-town visitor—thank you for your 12 years of support.
To our wonderful staff—from Front of House to Back of House—thank you for your incredible hard work, patience and understanding as we tried to navigate our long road to recovery.
We remain hopeful that this goodbye is not forever. We keep our fingers crossed that some version of Sap and our cooking could pop up in the future.
In the meantime, please don’t be shy about paying us one last visit before we close up shop. We’d love to see you.

Derek Wright
Born in a small Ontario town, Chef Derek Wright grew up surrounded by lush farmland, high quality meat and beautiful, fresh produce. Despite this natural bounty, the area was sorely lacking in great restaurants and dining experiences. Chef Derek, who had a natural affinity towards working with food, couldn’t shake the feeling that there was more to discover – a lot more. With that, he set out at the age of 18 to travel and cook his way across Canada.
